Cornmeal Muffins

Ingredients
3/4 cups yellow corn meal 1 scoop plant protein powder1/4 cup oat bran1/4 cup flax seed meal1/4 cup honey1 teaspoon baking powder 1/2 teaspoon salt 1 tablespoon butter1 cups boiling water 1/2 cup milk 1 egg
Directions
Fist, mix the protein powder and milk and set aside. Bring 1-cup of water to a boil on the stove or in the microwave. While the water is heating, combine the cornmeal, baking powder, and salt. Have the butter close by. Pour the boiling water into the cornmeal mixture. Stir and stir and stir. The mixture will lump up some, but if you keep stirring it will smooth out. Add the butter and honey and stir until it melts. I use a whisk to mix this up because it is best for getting rid of the lumps. Next add the protein milk. Once again, stir until the mixture is smooth. Now add the egg and continue mixing until the whole thing is smooth. Add the flax and oat bran and stir in. Turn the batter into silicone lined muffin pans. Bake at 425° for about 10-15 minutes. They will be golden brown and puffed when they are done. Remove them from the pan after cooling a little.
