Greek Couscous with Chicken and Feta

2 lbs Chicken Breast, no skin2 Tbsp Olive Oil; divided 2 garlic cloves; minced1 Onion; chopped 3 tsp dried oregano, divided 1 tsp Salt1 1/2 c Israeli (Pearl) Couscous1 1/2 c Low Sodium Chicken Broth1 cup Water1/2 lb (give or take) Fresh Green Beans; trimmed and halved1/2 Tomatoes, seeded and diced12 Marinated Artichoke Hearts roughly chopped 12 Tbsp Feta Cheese Crumbles1/2 c. Kalamata Olives; pitted and halved2 Tbsp lemon juice
1. Heat 1 Tbsp oil in skillet and season chicken with 1/2 of oregano, salt, and additional dried minced garlic. Add to skillet and sear. Once one side is seared, removed and slice into pieces.
2. Once chicken is cooked, removed from pan. Add remaining oil. Cook garlic for 30 seconds then stir in onion and remaining season and cook for 4 minutes.
3. Stir in couscous and cook for 1 minute. Add chicken broth and water and bring to a boil, reduce heat to med-low and cook, covered, for 12 minutes or until water is absorbed. Add green beans for the last 5 minutes of cook time.
4. Add chicken, tomatoes, artichoke hearts, olives, and lemon juice and leave on heat for 5 minutes.
5. Top with Feta Cheese and serve.
