WW curried shrimp & rice salad

Ingredients
2 onions finely chopped1/2 c chicken broth1 tbsp curry powder2 tbsp golden raisins2 tbsp apricot jam2 macintosh apples, cored and cut into chunks2 bananas, cut into 1/4" pieces1 tbsp lemon juice3/4 lb cooked shrimp2c cold cooked brown rice2 celery stalks chopped1 1/2 c plain skim yogurt3 tbsp reduced fat mayo1/2 tsp salt2 c lettuce
Directions
1. in small saucepan cook onions, broth and curry powder bringing just to a boil. reduce heat and simmer until onions are soft. stir in raisins and fruit. cool completely.
2. In medium bowl combine apples, bananas, and lemon juice. Stir in shrimp and rice. In another bowl mix broth mix, yogurt, mayo and salt. Pour over shrimp mixture and stir. Serve over rice.
