1 large onionabout 6-8 medium tomatoes 2 zuchinnibasiloreganosaltolive oil-3 TBS.
Slice onion and saute in 2 TBS. olive oil for about 3 minutes. Then add chopped tomatoes and sliced zucchini. Add any spices you desire at this time, too. I like to add basil, oregano, thyme, salt and pepper. Cover and let simmer for about 15 minutes. Then uncover and continue to simmer for 10 more minutes. Serve over spaghetti noodles. Makes about 10 servings.
