Mango, Black Bean and Corn Salsa

Ingredients
1 c. black beans (canned or homemade)1 c. frozen sweet corn1 c. chopped fresh mangos3 tbsp. chopped fresh cilantro1/4 c. lime juice (about 3 limes)1 tbsp. finely diced green onions3 cloves minced garlic1 medium red bell pepper, finely chopped1 tbsp. olive oilsalt to taste
Directions
Chop all ingredients as instructed and set aside. Heat oil in a large skillet and add the red peppers, onions and minced garlic. Cook until peppers begin to soften and onions are lranslucent. Add the remaining ingredients and cook until wram through, adding salt to taste. Enjoyo! Goes great on fish tacos, or as a dip with chips. Serve warm or cold.
