Vegan Perogy

Ingredients
* *Flour, white, 3 cup * Salt, 1 tsp * warm Water, tap, 1 cup (8 fl oz) * *Rice Dream Original rice milk, 0.25 cup * *Celeb margarine, 2 tsp * *Potato, raw, 2 medium (2-1/4" to 3-1/4" dia.)
Directions
Combine flour, water and salt to make a soft dough, let rest 20 minutes. Peel, slice and boil potatoes and mash with Rice milk and dairy-free margarine. Roll out dough and cut into 2" circles. Add 1-2 TBSP potato mixture to each dough cirle and fold in half, pressing sides together. Bring to a boil a large pot of salted water, dropping perogy in one at a time and cooking for 4-6 minutes.
