Heart-Healthy Honey Raisin Bran Muffins

2 ½ cups Total Raisin Bran Cereal1 ¼ C skim milk1/3 C honey1 ½ - 1 ¾ C Whole Wheat flour1 T BKG Powder¼ t salt2 T brown sugar½ C raisins1 egg¼ C Olive Oil
makes 12 muffins (2")
preheat oven to 400.
In a large mixing bowl, combine Raisin Bran Cereal, milk, and honey. Let stand 3 minutes or until cereal softens.
In a separate bowl, stir together Flour, BKG Powder, Salt & Sugar – set aside.
To the softened Raisin Bran mixture, add egg & Oil, beat well. Then add flour mixture, stirring only till combined. Add raisins, stirring only till combined. Put batter in 12 2” muffin cups.
Bake @ 400* for 20 minutes.
