Asian Veggie Peanut Noodles

Ingredients
1/2 c Rice wine vinegar2 T Sesame oil1 T Soy sauceJuice of 1 lime2 T Grated ginger1/2 c Peanut butter, smoothRed pepper flakes (optional)1 package whole wheat spaghetti1 c Scallions, chopped1 c Baby arugula1 Bell pepper, cut into strips2 T Cilantro, chopped
Directions
Prepare pasta according to package instructions.

Whisk together vinegar, sesame oil, soy sauce, lime juice, ginger, and peanut butter, until smooth. Add red pepper flakes if desired.

Add sauce, scallions, bell pepper, and arugula to the drained pasta. Toss to combine. Garnish with chopped cilantro.
