Thai Red Chicken Lasagne

Ingredients
2 cups sour lite cream1 tsp dried coriander2-3 tbs red curry paste500g chicken thigh fillet, cooked & chopped1 cup tomato paste200g instant lasagne sheets1 cup Coon Lite & Tasty, grated
Directions
Preheat oven to 180C
Lightly grease shallow oblong dish
Combine sour cream, coriander, curry paste and chicken in a bowl and mix well
Pour 1/4 cup tomato paste into dish and layer with lasagne sheets
Top with 1/2 chicken mixture and sprinkle with grated cheese
Repeat layers of tomato paste, lasagne sheets and chicken, finishing with a layer of lasagne sheets topped with remaining tomato paste and grated cheese
Bake for 25 min or until pasta is tender
