cornmeal,pepper and chive muffins

Ingredients
1 1/2 cups of buttermilk3 tbl oil2 tbl floral honey1 egg1 can of corn (drained)1 med. red bell pepper finely chopped1 bunch of chives, snipped1 1/2 cups of self rising flour1 cup stoneground cornmealpinch of salt.
Directions
Preheat oven to 375 degrees Lightly coat a 12 cup muffin pan with oil spray.
In a large mixing bowl, beat together the buttermilk, oil, honey, and egg.
Stir in corn, bell pepper and chives.
Quickly stir in the flour, cornmeal and pinch of salt.
Spoon the batter into the prepared muffin pan.
Bake for 25 to 20 minutes or until golden brown and a wooden toothpick comes out clean.
