Potato and Turkey Bacon Slow Cooker Chowder (WW)

Ingredients
2 oz fat free half-and-half1/2 c fat free evaporated milk4 oz turkey bacon1/4 tsp black pepper1/4 tsp thyme1 bay leaf4 cups fat free chicken broth1/2c barley, uncooked1 medium garlic clove1 cup onion, diced1 large carrot, diced2 cups potatoes, diced
Directions
In slow cooker, combine all ingredients in slow cooker except the fat free half-and half and evaporated milk. Cook on low for 6 hrs.

After chowder has cooked, stir in the ff evaporated milk and ff half and half and heat through for about 10 min before serving.

Makes six 1 2/3c servings

    This is SOOOOOOO good!! I've been craving potato & bacon chowder & this totally hit my craving..! The only thing I did differently than the recipe is add a roux for thickness - DH prefers a thick chowder. I'm really impressed with this recipe & it's going to be a regluar on our menu.     MMMM!!! i decided to fry up my turkey bacon first in a non stick pan to crisp it up. So it added a few calories with the spritz of cooking spray i used but.. it was delish! - 8/17/10
