Banana sweet potato muffins

1 cup all purpose flour1 cup wheat flour1/2 cup sugar1/4 cup brown sugar1 teaspoon baking powder1/2 teaspoon baking soda3/4 cup ripe,mashed bananas3/4 cup cooked,mashed sweet potato1/3 milk2 large eggs6 tablespoons unsalted butter, melted and cooled slightly1 teaspoon vanilla1/2 teaspoon cinnamon
Makes 12 regular muffins or 36 mini muffins
Bake at 375
Mix together in a large mixing bowl the flours, sugars, baking powder, baking soda, salt and cinnamon.
In a medium bowl mix the mashed bananas and sweet potatoes, milk, eggs, melted butter and vanilla.
Lightly fold the banana mixture into the dry ingredients, just until combined. Do not over mix.
Scoop into greased muffin tins. Bake 20-23 minutes for regular muffin size or 12-14 minutes for mini muffins. let cool in pan 5 minutes. Remove and cool on rack. Eat warm or cool completely and store in sealed container for three days. Can be frozen too.
