Creamed Spinach

Ingredients
2 10-oz packages fresh spinach1/2 tsp salt1/2 tbsp butter1/4 cup minced shallots2 cloves garlic, minced1/4 tsp ground nutmeg1/4 tsp black pepper1/4 cup half & half
Directions
Add salt to a pot of water and bring to a boil. Add spinach and boil for 2 minutes, and then drain promptly. Squeeze as much moisture from the spinach as possible, and then chop and set it aside.

Melt butter in a sautee pan over medium-low heat. Add shallots and garlic, and cook slowly for about 3 minutes, until soft (but not browned). Add chopped spinach and sautee until the spinach releases its liquid, then add the seasonings. Cook until the liquid is mostly evaporated, and then add the half and half, and cook until thickened.

Share and enjoy. Makes 6 small servings.
