Whole Wheat Penne, half box Crushed Tomatoes, 14 ounce canTomato Sauce, 28 ounce canRed pepper, 1 medium size, diced Onion, 1 medium sized, diced Garlic, 3 cloves Salt, 1/4 tsp Pepper, black, 1/2 tspBasil, 2 tbsp Thyme, fresh, 2 tsp Oregano, dried, 1 tsp *Quorn Ground Meat Substitute, 1 cupRicotta Cheese, part skim milk, 14 ozMozzarella Cheese, part skim milk, 4 oz
Make sauce by sauteing red pepper, onion, and garlic until soft. Deglaze with a splash of wine if you have it on hand. Add tomato sauce and crushed tomatoes and spices. Add fake meat crumbles. Let simmer for 20 to 30 minutes.
Cook pasta according to directions for al dente.
Mix ricotta with mozzarella cheese.
When pasta is done, mix cheese, sauce, and pasta in a 13 by 9 pan.
Bake for 40 minutes at 350 degrees until brown and bubbly!
