Quinoa Cornmeal Pancakes, Gluten, Sugar, and Dairy Free

1/4 C quinoa flour1/4 C quinoa flakes1/4 C cornmeal1 tsp baking powder1/2 tsp salt1/4 C Egg Beater3/4 C unsweetened soy milk1 Tbsp olive oil1 tsp honeyPam spray to grease pan, use sparingly
Mix dry ingredients first, then add egg, milk, olive oil, and 1 tsp honey. Heat a large skillet and lightly coat with Pam. Measure by 1/4 C onto hot pan. Cook until bubbles start to form on the surface, then flip and brown the other side. Top with favorite topping (not included in the nutritional info), such as pureed strawberries, honey, etc.
