Ground Turkey Enchilada Casserole

Ingredients
1 package of 93% lean ground turkey, browned1/2 onion, chopped1 can of tomato soup1/2 c. water1 package of chili or taco seasoning1 cup of mexican cheese, shredded1 can of fat free refried beans
Directions
Brown the ground turkey with the onion. Mix in a can of tomato soup, water, and chili/taco seasoning. Meanwhile, heat 10 corn tortillas in the microwave for 30 seconds.

In a 9 x 9 pan, pour enough of the meat mixture to cover the bottom. Top with 3 tortillas. Cover the tortillas with 1/2 can of refried beans and 1/3 of the cheese. Add another layer of tortillas. Cover again with beans and cheese. Then use final layer of tortillas (you'll have four left). Pour the rest of the meat mixture over the top. Cover with remaining cheese.

Bake uncovered at 350 for 20 minutes or until heated through and cheese is melted.

Cut into 8 pieces and serve.
