Ultra Crisp Sweet Potato Fries

Ingredients
1/2 pound sweet potato cut into "fries" (the thinner the better)1 egg white, beaten1/2 cup panko bread crumbs1 tbsp cornmeal1/2 tsp ground cinnamon (optional)DASH of sea salt (optional)
Directions
Preheat oven to 500 degrees. In a medium size bowl, coat the fries in the egg white. Combine remaining ingredients then sprinkle evenly over fries. Get them really coated.
Place on a parchment lined baking sheet and bake for 15-20 minutes.

    The panko wouldn't stick to the fries. Are we supposed to spread the fries on the pan and then sprinkle panko/cornmeal mix over them? I tossed the fries in the crumbs in a bowl before spreading out. Maybe that was my problem. And do you mean the yellow flesh sweets or the red fleshed "garnet yams"? - 11/9/10
