NFNS Baked Bacon and Egg cups

Ingredients
12 strips bacon3/4 cup salsa (sugar free)12 eggs12 canned pineapple rings, drained (sugar free)cooking spray
Directions
Preheat oven to 350F.
Cook bacon in skillet until nearly done but still flexible. Coat muffin cups with spray. Line sides of muffin cups with bacon slices. Place 1 tablespoon salsa in bottom of each cup. Break 1 egg into each cup, taking care not to break yolk. Season with salt and pepper.
Bake about 10 minutes, or until eggs are set but not completely done. Remove with spatula, set on pineapple rings and serve.
