Mom's Sauerkraut Soup

Ingredients
10 c. water1 ham bone2 bay leaves, whole2 c. ham, cut into bite-size pieces2 (14.5 oz.) cans sauerkraut1 (15.5 oz.) can Dark Red Kidney Beans1/3 c. water3 tbsp. Corn Starch
Directions
1) In a Dutch Oven, cover ham bone with water. Add bay leaves. Cover and simmer for 1 hour.

2) Remove bone. Add ham pieces, sauerkraut, and kidney beans. Bring to a boil.

3) Meanwhile, mix together 1/3 c, water with 3 tbsp. cornstarch. Sitr until smooth. Add to soup, and continue to stir, 5 min, until soup comes back to a boil.

4) Remove bay leaves before serving.

Makes 8 1-cup servings.

*Refrigerated sauerkraut can also be used in lieu of canned.

    Excellent! DH had tossed bone. I simmered 2 C. chopped ham, 4 C. of veg. stock, 4 C. of water & one pkt. of ham flavoring for 1/2 hour. added sauerkraut, 2 cans dark kidney beans, 1 T. mint sauce, 1 1/2 t. mint flakes & gourmet cracked pepper, 3 T. flour & 2/3 C. water & simmered 1/2 hour.     I'm also kinda doubtful about the sodium content. Canned beans, ham, and kraut? Sorry, but I just have a difficult time figuring the sodium could be that low. - 6/14/09

    mmm i love sauerkraut soup! my family is czech and we make it a little differently. we use pork ribs, sauerkraut and sour cream. then top it off with a dallop of mashed potatoes. - 2/20/09

    I thought it was pretty darn tasty. I didn't have a ham bone so I simmered the ham and bay leaf together for about a half hour and then tossed in the rest of the ingredients. I'll probably throw in an extra can of beans next time. Also recommend some fresh ground pepper. - 1/1/08

    I like hearing about the alternatives. I think it'd be great to hear more versions of using sauerkraut. We used to have pork hocks boiled in sauerkraut served over mashed potatoes...yummy! I'm not so sure about the beans in with the kraut, but putting whole or cut up potatoes sounds pretty good.:) - 1/2/10

    Maybe I'm missing a Polish tastebud but this just wasn't good. I first tried it as directed and then added a can of Rotel tomatoes to spark it up - didn't work. The ham seemed to fade away so maybe sausage would better. Sweetener missing? I may still play around with it since I love kraut - 1/10/09

    I have made something similiar to this before. But instead of beans, I added potatoes and carrots. Like a ham stew but with kraut added. I will definitely try this. Sounds really good to me, I love kraut! - 12/27/08

    I couldn't figure out how the sodium could be so low until I checked the Ingredients details. That says that only 4 TBS of kraut was used in the calulations. Makes a big difference if you chane that to 4 cups. - 12/6/08

    I thought this sounded good, but now I remember why I don't like sauerkraut. It is way to sauerkrauty for me, but if that's your thing I'm sure you'll like it. I agree it could probably use more beans. - 1/9/08

    No bone - used 1/2 T of ham flavored soup base in 3 C water. Soup base has salt, so rinsed beans & kraut to remove some salt. We like kraut but not real strong so used 1 can milder bavarian style & 2 cans beans. Didn't use corn starch. Allowed to cook together for a while. Was like a stew. Repeater. - 1/3/11

    This was a simple soup with unique ingredients. I am a vegetarian so omited the ham and bone and used 1 C veg broth and 4 C water, adding 1 carrot, 2 celery stalks and 1 bag of brocolli. Used bagged kraut and rinsed the kraut and beans very well in homes of decreasing the sodium. Will make again! - 2/3/10

    I called our church mom who makes something similar for our soup and sandwich fundraisers - she suggested another can of beans and a chopped apple - cause she uses half sour kraut and half fresh cabbage. I added the beans and apple and it is yummy, and I haven't even thickened it yet. - 1/30/10
