Copabanana Cake (from Crazy Plates cookbook)

Ingredients
2 cups all purpose flour1 tsp baking powder1 tsp baking soda1/2 tsp salt1 cup sugar1 egg and 32 grams of simply egg whites (or 2 eggs) (alternatively you can use 1/2 cup egg substitute)1/4 cup margerine or butter, softened1 cup mashed very-ripe bananas (about 3 bananas)1/2 cup low-fat sour cream1 tsp vanilla extract1/2 cup mini chocolate chips
Directions
Makes 16 pieces

Preheat oven to 350 F
Spray a 9x13 cake pan with cooking spray
Mix flour, baking powder, baking soda and salt together in a medium size bowl and set aside.
In another bowl, mix together sugar, egg, egg white or egg substitute, and margerine or butter using an electric mixer on medium speed.
Add mashed bananas, sour cream and vanilla and mix again till smooth.
Add dry ingredients gradually, mixing after each addition. Batter will be thick. Fold in chocolate chips.
Spread batter into prepared baking pan.
Bake for 25-28 minutes at 350 F until a toothpick inserted into the centre of the cake comes out clean.
Cool completely on a wire rack.
Cut into 16 pieces. Store in an air-tight container.
