Chilli Lemon Chicken & Mushrooms

Ingredients
100g skinless chicken breast (approx. half one side of a medium-sized breast)half tspn granulated garlichalf tspn dried chilli flakes (or to taste)half tspn black peppertspn sunflower oilquarter cup jalapeno peppers, chopped finely1 cup chopped mushroomsquarter cup spring onion, choppedquarter cup lemon juicedash salt
Directions
1. Slice piece in half horizontally to make two thinner pieces
2. Coat chicken pieces in garlic, chilli and pepper
3. Heat oil in frying pan over medium-low heat and add chicken, turn quickly to coat both sides.
4. Cook chicken for 2.5 minutes each side, then add mushrooms, jalapenos and spring onions.
5. Stir until mushrooms are soft (approx. 5 mins)
6. Add lemon juice and salt, stir through then serve.

Makes 1 serve.
