Breakfast Pizza Mexicali

1 oz. soy chorizo (like the kind by El Burrito, Melissa's, or Frieda's) 1/2 cup fat-free liquid egg substitute (like Egg Beaters Original) 1/4 cup salsa 1/4 cup shredded reduced-fat Mexican-blend cheese (like the kind by Sargento)
Bring a small skillet sprayed with nonstick spray to medium heat on the stove. Add soy chorizo and cook until browned, about 3 minutes, using a spatula to break it into pieces. Remove chorizo from the skillet and set aside.
Remove skillet from heat, re-spray, and bring to low heat on the stove. Pour in egg substitute. Cover and cook for 3 minutes, or until egg "crust" starts to form.
Carefully flip your egg. Cover and cook for another minute.
Evenly top your egg crust with salsa, cheese, and cooked chorizo. Cover again and cook over low heat for 2 minutes, or until cheese has melted.
