Ingredients:Onions, raw, 3 cup, chopped (remove)Carrots, raw, 1 medium (remove)*Cumin seed, 1 tsp (remove)Turmeric, ground, 1 tsp (remove)Raisins, .25 cup, packed (remove)Walnuts, .5 cup, chopped (remove)Chickpeas (garbanzo beans), 2 cup (remove)Olive Oil, .25 cup (remove)Couscous, 6 cup, cooked (remove)*Summer Squash, 4 cup, sliced (remove)*Lemon Juice, .25 cup (remove)
Sautee spices and onion in oil till clear. Add carrot, sautee another 4 min. Add squash, beans, raisins, walnuts, and 1 cup water. Cook till squash are soft, about 10 min. Mix in cooked couscous and salt/pepper to taste. Add mint or parsley for ganish if desired.
