Whole Grain Bagels

3 C warm water (110-115)3 Tbsps honey2 pkgs yeast1 tsp salt7 2/3 C whole wheat flour1/3 C milled flax seed
in very large bowl, mix water honey and yeast. set aside for 5-10 min. add the salt to half the flour, beat into liquid. beat 3 minutes.
turn out on floured board and knead in ramaining flour. knead well for 10 min.
place in greased bowl and turn to coat well. cover with plastic wrap. set aside for 1 hour to rise.
bring large pot of water and 2 tbsps sugar to a boil. punch down the dough and divide into 18 equal pieces. shape each into a ball, flatten and poke a hole into each. gently drop a few bagels into the water.
boil for 2 minutes. using a slotted spoon, remove and drain. repeat with rest of bagels.
place on a greased cookie sheet and bake in preheated 400 degrees F oven for 20 min or golden brown.
makes 18 bagels.
