Lassy Apple - Raisin Cake

Ingredients
5 tbsp ground flaxseed meal1/2 cup hot water1/2 cup salted, cultured butter, softened1/2 cup Demerara sugar1/4 cup maple syrup2 tbsp fancy molasses1/2 cup nonfat plain Greek-style yogurt1 tbsp cinnamon1 tsp nutmeg1 1/2 cups whole spelt flour2 tbsp tapioca flour1/2 cup rolled oats1/2 tsp fine sea salt1/2 tbsp baking powder1/2 tsp baking soda2 large apples, diced (peeled or not, I don't peel them)1/2 cup raisins
Directions
Preheat oven to 350F and grease a loaf pan.
In a small bowl, whisk together flaxseed meal and hot water. Set aside.
In a large bowl cream together butter and sugar until fluffy.
Add syrup, molasses, yogurt, cinnamon and nutmeg, beating well, then blend in the soaked flaxseed mixture until well mixed.
Whisk together flour, tapioca flour, oats, salt, baking powder and baking soda in another bowl.
Add to the butter mixture, stirring in by hand.
Add apples and raisins, folding in.
Bake 1 hour, tenting with foil after 40 minutes.
