Dijon chicken with portabella mushrooms

Ingredients
1 Ilb chicken breast ( I used the thinly sliced breast)1 Tbs. of honey2 tbs. dijon mustard1 red pepper sliced thinlysliced portabella caps (about 2 caps or one pre-sliced package)half a medium onion ( sweet or red)4 oz shredded aged cheddar cheesenon-stick cooking spray
Directions
Pre heat oven to 350
mix together honey and dijon mustard in a small bowl and set aside. Spray skillet generously with non-stick cooking spray add mushroom caps, cook for about 5 minutes on medium heat then and red pepper continue to cook until mushrooms shrink done and peppers begin to soften, add onion and cook for another couple of minutes. set pan aside. place chicken in another skillet season with salt pepper and garlic powder cook over medium heat for 3-4 minutes per side. Remove chicken from skillet and place on baking sheet sprayed with cooking spray. Brush each piece of chicken with dijon sauce, then spoon red pepper/onion mixture over each. Top with cheese. Bake for about 15 minutes or until chicken is cooked through. Makes 4 servings. Enjoy!

    Wonderful recipe. Very close to Applebee's version. Both son and hubby loved it. Hubby thought that the honey to dijon ratio might have been off just a bit so I may adjust to our own taste but that was the only thing that may change. - 4/16/12

    This recipe was soooooo good. I wasn't sure about adding the cheddar cheese but it really made the dish and would have not been the same without it. I served with brown rice. Husband liked it to and asked that I keep the recipe on hand to make again. - 1/20/11

    I truly enjoyed this meal! I served it at a potluck after cutting the chicken breasts into smaller pieces and served it in a 9x13 pan. Some thought it needed some more kick, so I'll probably throw some spice in next time, but for me, the recipe was great itself! - 9/20/10

    Tasty recipe. My chicken breasts were pretty thick so I put it in the oven for 55 mins which made it rather dry, so if you have thick pieces too I suggest 35 mins. Thanks for the recipe. - 9/15/10

    Really enjoyed this recipe. Very tasty, just uses too much equipment, which involves clean-up. It is really good, though, and we'll be making it again, I'm sure, when all the family is here. Might work better to have everything prepped, then use the same pans for the various stages. - 9/13/10
