Sausage, Egg & Veggie Casserole Bake

Ingredients
1/2 pound ground sausage (I use Meijer brand)4 slices low calorie bread (I use Aunt Millie's Light Whole Wheat)1 cup shredded cheddar cheese10 eggs, beaten2.5 cups skim milk1/2 c diced red pepper1/2 c diced onion1/2 c fresh spinach1 tsp saltpepper to tasteWhatever other veggies and as many as you want!!!
Directions
Cube the slices of bread and place evenly in a greased 9x13" baking dish. Sprinkle with browned sausage, veggies and cheese. Mix eggs, milk, salt, pepper, pour over mixture.

Bake for 45 minutes or until set at 325

Makes 10-12 servings. Nutritional info is calculated on 12 servings @ 217 calories each.
