Chicken and Broccoli Casserole

Ingredients
1 pound cooked chicken breast (cut into small pieces)20 whole wheat Ritz style crackers (crushed)1 can reduced fat cream of chicken soup1 cup fat free sour cream2 squeezes of smart beat buttery squeeze1 10 oz bag frozen chopped broccoli
Directions
If chicken is not cooked, then cook on grill or in oven until juices run clear. Chop into casserole sized pieces. In large bowl, mix cream of chicken soup with 1 cup of ff sour cream and up to 1/2 tsp of salt substitute (if desired). Add chicken and toss until mixed well. Rinse off frozen broccoli and drain. Add to chicken mixture and mix in. Turn mixture into 12 x 9 casserole dish. Crush crackers in a plastic bag with a rolling pin. Top casserole with crackers and then squeeze about 2 T of buttery non fat squeeze onto the top. Bake at 350 for 20 minutes. Makes 6 servings.

    This dish was really good. I used to make a variation of this casserole for the holidays. It was loaded with fat-butter, cheese, mayo. This was better. The only thing I would do differently is chop up my broccoli more. My pieces were too chunky. Thanks for sharing your recipe! - 2/3/11
