Honey Roasted Sweet Potatoes

Ingredients
2 lbs. red-skinned sweet potatoes2 tbsp. olive oil2 tbsp. honey1 tsp. fresh lemon juice1/2 tsp. salt
Directions
Preheat oven to 350 degrees. Peel and cut the sweet potatoes into 1 inch pieces and put in a 9 by 13 inch baking dish. In a small bowl whisk together olive oil, honey, and lemon juice. Pour mixture over potatoes and toss to coat. Sprinkle with the salt, and bake, stirring occasionally, for about 1 hour, until potatoes are tender.

    This is an excellent recipe. I foil wrapped the potatoes and put them on the grill for about 45min. Recalculate the nutrition though. 2lbs of sweet potatoes yield approx 6 cups. If calculated correctly this side is closer to 200 calories. I don't see credit given to Elle Krieger either. :-( - 4/15/10
