Deja Vu Sloppy Joes (Vegan)

Ingredients
8 oz firm tofu1/2 cup chopped onion1 clove of garlic, minced1 tablespoon Smart Balance Oil3/4 cup chopped bell pepper1 large tomato, diced1/2 can tomato paste1/4 cup water1/2 teaspoon ground cumin1/2 teaspoon dried oregano1/2 teaspoon Splenda1/4 teaspoon red pepper flakes1/2 teaspoon salt1/4 teaspoon ground black pepper
Directions
1) Sandwich the tofu between two plates and rest a heavy book or weight on the top plate. Press for 15 min and drain the excess liquid from the bottom plate.

2) In a medium bowl, crumble the pressed tofu and set aside

3) In a medium skillet, heat the oil on medium heat. Add the onion and garlic. Saute for 3-5 min, until the onion is translucent. Add the bell pepper and continue to cook for 5 more min, stirring occasionally.

4) Add the tofu, diced tomatoes, tomato paste, water, cumin, oregano, chili powder, sugar, red pepper flakes, and salt. Simmer for 10 min, adding black pepper for to taste.

Makes 2 servings.
