Healthy Zuchini/Banana Bread

Ingredients
Dry Ingredients:1 cup Hodgsonmill 100% stone ground Whole Wheat Flour1 cup Red Mill Almond Flour1cup Splenda1/3 cup Red Mill Soy Flour1/3 Cup Ground Flax Seed3/4 tsp. salt1/2 tsp baking soda1/4 tsp baking powder1/4 tsp ground nutmegWet ingredients:2 large eggs6oz plain Greek yogurt3/4 Cups shredded peel on zuchini1 cup mashed very ripe banana1/3 cup unsweetned no sugar added applesauce1/2 tsp. pure vanilla extract1/2 apple thinly sliced
Directions
Pre heat oven to 350 degrees, butter bread pan.
Mix all dry ingredients together. In a seperate bowl mix eggs, yogurt & applesauce with a mixer until well blended. Then add other wet ingredients and stir. Pour into dry ingredient bowl & stir with a spoon until well mixed. Pour half of mixture into bread pan. Then top with 3 thinly sliced pieces of apple. Pour remaining mixture over apples. Top with very thin slices of apple. Cook for 75 minutes. Cool on rack before serving. Makes 12 slices

Try adding chopped nuts for something different!
