"Mexican" Sheppard's pie

Ingredients
1 head of cauliflower2 Tbsp olive oil2 Tbsp water0.5 cup 1% milk1 leek1/4tsp of cumin1/4tsp of ground coriander seeds1/4tsp oregano1/8tsp cayenne pepper1.5lb of lean ground beef1 cup of corn1 cup of salsa
Directions
Makes 6 (aprox. 1 cup servings)

1- Preheat oven to 350 degrees.

2- Cut cauliflower into small florets and place on baking sheet with olive oil and water. Cover with aluminum foil and bake for about 30 min or until soft.

3- Mince leek. With about 2 Tbsp of water, "fry" leek until soft but not brown. Take out of pan and set aside.

4- Steam corn for about 2-3 min. (I use the microwave)

5-Brown beef with 1/4tsp cumin, ground coriander seeds, oregano and 1/8tsp of cayenne pepper. Add in leek and corn. Cook for another 1-2min.

6- Layer beef at bottom casserole dish. Layer salsa on top. Set aside.

7- Take cauliflower and place in blender with milk. Blend until a mashed potato consistency. Add cauliflower on top of salsa.

8- Bake sheppard's pie for 30 min.

    Great recipe to add extra veggies! I added jalapenos to meat mixture and a little cheese to top at the end. Next I'll try adding sour cream. - 1/13/11
