Black beans, corn, and rice

Ingredients
4 cups cooked rice1 (15 ounce) can black beans, rinsed and drained1 (15 ounce) can corn, drained2 fresh tomatoes, diced1/2 cup red onions, chopped1/2 cup cilantro, chopped2 tablespoons fresh lime juice1 tablespoon olive oil1/2 teaspoon salt1/4 teaspoon fresh ground pepper2 dashes hot sauce
Directions
*Cook rice according to instructions
* In a medium bowl, combine black beans, corn, tomatoes, onion, cilantro, jalapeno, lime juice, oil, salt, pepper and hot sauce.
To serve, Place a scoop of hot rice in a bowl or on a plate, top with a generous scoop of the black bean mixture.
Stir together before eating.

    Very easy to make. Not bland at all! It reminds me of an African salsa my husband likes to make being served on top of rice. I think you could get 8 servings out of this and still have a nice amount to eat. A keeper! - 9/22/09

    It was bland for my taste(ha-most of my ratings say this)
    My hubby went nuts over it! He really liked the cilantro in it! Next time I am going to add a little bit of garlic and maybe serve with tortilla chips or as a wrap. Great vegetarian dish! - 8/29/07
