Portobello Melt Sandwich

Ingredients
2 portobellos, gilled and sliced2 TBS olive oil divided2 garlic cloves minced1/4 dry white wine1 TBS apple cider vinegar1/2 tsp dijon mustard1 cup baby spinich leaves4 slices of whole grain wheat bread1 cup mozzarella cheese shredded4 slices of tomato
Directions
Saute mushrooms in 1 TBS of olive oil with minced garlic for about 3 minutes. Add wine to deglaze the pan and until wine has evaporated. Season with pepper and set aside.
Wisk together Vinegar, 1 TBS of olive oil and mustard. Add spinich and toss to coat.
Spray pan with nonstick spray and assemble sandwiches by first adding 1/4 cheese, tomatoes, spinich, mushrooms and top with 1/4 cup of cheese. Cook on both sides until nicely browned and cheese has melted.
