Okra Bake

Ingredients
OkraSweet yellow pepperOnionCornCheddar CheeseCorn muffin mixEggMilk
Directions
Chop vegetables. Divide cheese and vegetables in half. Layer okra, pepper, onion, corn and cheese in 2 1/2 quart baking dish. Repeat with second half. Bake for 30 minutes in 400 degree oven or 8 minutes in microwave.

Prepare Jiffy corn muffin mix as directed with egg and milk, for corn muffins. Spread 1/2 of muffin batter over vegetables. Bake 20 minutes more.

Make muffins with second half of batter.

Serves 4-6.
