Tuscan White Beans w/ Spinach and Sun Dried Tomatoes

Onions, raw, 1 large Garlic, 3 cloves Olive Oil, 1TBLBeans, white, 4 cupSpinach, frozen, 1 packageSun Dried Tomatoes, 1 cupBasil (fresh) 1 cup leavesSage (fresh) 5-7 leaves
For me nothing beats fresh beans so I soak them during the day and cook them in the crock pot overnight. Otherwise just use a large (family size) can of white beans juice and all.
Brown onion and garlic in olive oil. Meanwhile chop up sun dried tomatoes and then add to pot. Add beans and spinach to pot. Generally I just throw the spinach in frozen.
Add herbs and if you don't have fresh herbs use dried but reduce accordingly. (1 teaspoon of the dried herb = 1 tablespoon of the fresh) Personally I wasn't a big fan of sage but it really works in this recipe and now I have a bit growing in my little perennial herb garden.
Serve this over pasta or with bread if you like. If you're vegetarian and bit of grated cheese is nice. I skip all that and just enjoy this by itself.
