Scrambled tofu with mushrooms and onions

Ingredients
16 oz block of extra firm tofu3T soy sauce (use low sodium if you have it)1 cup mushrooms, sliced1 cup onions, chopped2T paprika1/2 tsp chili powder
Directions
Open tofu and drain water. Place tofu on plate and place bowl filled with beans on top to squeeze out extra water.

While waiting on tofu, chop veggies and measure spices

saute onions and mushrooms in little bit of water or veggie stock in non stick pan (veggie stock not in calories).

add tofu after onions are soft along with spices and soy sauce.

saute a couple minutes longer just to blend flavors and tofu is hot.
