Tomato Cheese Tarts

Ingredients
44 grams Organic Mini Fillo Shells by the Fillo FactoryEgg White to brush shells2 Wedges Laughing Cow Light Creamy Swiss Original Cheese5 Leaves of FRESH basil12 Cherry Tomatoes, cut length wiseSalt and Pepper to taste.
Directions
Pre-Heat oven to 400 degrees.
Pam a muffin tin.
Gently brush the 12 fillo cups with the egg white.
Cut the two Laughing cow cheese wedges into 12 even peices and place in fillo cups.
Cover with chopped basil.
Place 1 cherry tomato cut in half lengthwise over the cheese and basil.

Put in oven for 10 to 12 minutes or until golden brown.

Makes 2 servings.
