Carrot & Raisin Salad

Ingredients
DRESSING1 Cup fat-free vanilla yogurt2 TBS powdered sugar1 tsp grated orange peel SALAD4 Cups coarsely shredded carrots (about 5 medium)1 8 oz can crushed pineapple (in it's own juice), well drained1/2 cup raisins (I use golden raisins)
Directions
To make dressing: in small bowl, use a wire whisk to stir together the yogurt, sugar and orange peel.
To make salad: in large bowl, combine carrots, pineapple and raisins. Add the dressing and fold in until the carrot mixture is coated. Cover and chill in the refrigerator about 30 minutes before serving.
Makes 8 side dish servings.
