This recipe is made using ingredients from Aldi.
Spray the bottom and sides of a large glass baking dish with fat free cooking spray.
Spread shredded potatoes into the bottom of the dish and pat down evently. Season to your liking.
Pour 2 16 oz. cartons of egg substitute evenly over the potatoes.
Spread one cup of shredded low fat cheese over egg substiture.
Add diced ham on top of cheese and push down into egg substitute so that cheese and ham are submerged into egg.
Season one more time, to your liking (I used the same spices that I use for steak seasoning).
Bake at 350 for 1 hour or until middle of egg bake is solid (knife comes out clean after poking into the middle of bake). Let stand for 10 minutes and then cut into 9 portions (or 8 if you were looking for more calories per serving).
