Sweet and Sour Shrimp

1 package (6 ounces) frozen Chinese pea pods, partially thawed1 can (13 ounces) juice-packed pineapple chunks or tidbits (drain and reserve 1/2 juice)3 tablespoons sugar1 chicken bouillon cube1 cup boiling water2 tsp. soy sauce1/2 tsp. ground ginger2 cans (4 1/2 ounces each) shrimp, rinsed and drained2 tbsp. cider vinegarHot cooked rice (optional)
Place pea pods and drained pineapple in crock-pot. In small saucepan, stir together sugar and cornstarch. Dissolve bouillon cube in boiling water and add with juice, soy sauce and ginger to saucepan. Bring to a boil, stirring constantly. Cook sauce about 1 minute or until thickened and transparent. Gently blend sauce into pea pods and pineapple. Cover and cook on Low for 5-6 hours.
Before serving, add shrimp and vinegar, stirring carefully to avoid breaking shrimp. Serve over hot rice (not calculated in nutritional info).
