Chicken and Feta Whole Wheat Pita with Roasted Red Pepper, Eggplant, Fresh Mint, Tomato, and Cucumber

I large whole wheat pita, halved4 oz chicken thigh, skin and fat removed1/4 cup fresh mint chiffonade1/2 cup of tomato1/2 cup cucumber with peel, chopped4 T Ajvar bell pepper and eggplant spread
Shake garlic salt, cayenne pepper, and ground ginger evenly onto both sides of chicken.
Cook chicken in nonstick pan with spray until done. Set aside, slice.
Spread two tablespoon ajvar per half of pita.
Salt sliced veggies, I mist with red wine vinegar.
Assemble pitas.
Serves two!
