Ingredients
Eggplant, fresh, 1 eggplant, unpeeled Mushrooms, canned, 1 cup Mozzarella Cheese, whole milk, 1 cup, shreddedTomato Sauce, .5 cup
Directions
Slice eggplant into four pieces, heat oven to 400, and lay eggplant on cookie sheet, top eggplant with tomato sauce, cheese and mushrooms. Baked for 10 minutes, and then broiled for 1 to 2 minutes to brown the top.
