Black Bean Quesadilla

2 flour tortillas1/2 c. refried beans1/2 c. salsa1/2 c. Mexican-style shredded cheese2 Tbsp. guacamole1 Tbsp. sour cream
Preheat oven to 400 degrees F.
Place aluminum foil on cookie sheet. Lay 1 tortilla on top. Spread beans evenly over the tortilla. Spoon salsa over the beans, then sprinkle with cheese. Top with the second tortilla.
Bake for about 15 minutes or until the cheese is melted and the top is crisp and brown. Meanwhile, swirl the guacamole and sour cream together in a small bowl. Cut the quesadilla into 4 equal parts and transfer to a plate. Serve with the guacamole mixture.
