Almost Veggie Spaghetti without pasta

Ingredients
1 Tb Olive oil½ Large onion2 cloves garlic¾ c. chopped zucchini½ cup sliced mushrooms¼ c. roasted red peppers2 – 15 oz cans crushed tomatoes (100% natural)1 – 6 oz can tomato paste1 15 oz. diced tomatoes½ lb or one large link Italian chicken sausage¼ C.. red wine1 tsp sea salt1 tsp each rosemary, onion powder and chili powder1/8 tsp ground clovesfresh thyme and basil to taste1 ½ cup water2 boxes gluten free fettuccini (I use DeBoles)
Directions
Sautee all vegetables, garlic and onion in olive oil. Remove from pan and set aside. Remove sausage from link, brown and crumble. Leave in pan and add red wine. bring to boil. Turn down heat and add veggies, diced and crushed tomatoes and paste. Add water, herbs, spices and salt. Bring to soft boil, then turn down heat and simmer for about an hour or cook on low in crock pot for about 4 hours. Serve over fettuccini. 8 servings.
