Healthful Sweet Potato Salad

2 large sweet potatoes, cubed2 tsp Herbs de Provence (may sub other herbs - see instructions for other ideas)1 tablespoon olive oil2 tablespoons white vinegar1 tablespoon lemon juice (juice of 1/2 a lemon)5 scallions, chopped3 stalks celery1/2 English cucumber, chopped1/2 cup cilantro, chopped - optional (if you use do not use herbs on your sweet potatoes - use cilantro here.. otherwise sub parsley)1/2 cup nonfat yogurt, plain (you can substitute mayo if you choose, either is a nice flavor)1/4 cup sunflower seed, toasted, salted
1. Preheat oven to 450 degrees.
2 Place cubed sweet potatoes on cookie sheet and sprinkle with olive oil and herbs de provence, then toss. Roast until tender but not mushy for 20-40 minutes depending on the size of your cubes. Ideally prepare this the day before. Allow to cool completely before combining with veggies.
3 Combine all chopped veggies with lemon juice and vinegar. Toss to coat all veggies.
4 Add sweet potatoes and yogurt and toss gently.
5 Add salt and pepper to taste.
6 Sprinkle with sunflower seeds and lemon zest.
Herbs of Provence is a combination of the following herbs: fennel, oregano, savory, thyme, basil, sage, lavender and rosemary... if you don't have all of these, use as much as you can... the combination is delicious... I recommend purchasing Herbs De Provence from Penzeys.com.

I served this to guests and we all really liked it. Not sure what to do with the Herb of Provence so put them on the sweet potatoes with the olive oil before I baked them. - 8/1/09

ewww you are right about herbs de provence and cilantro clashing! Just wanted to clarify... if you use herbs de provence then use parsley in place of cilantro.. if you do NOT use herbs de provence then use cilantro... sorry for the confusion..
