Unbelievable Potato Leek Soup

1 Tbsp Light butter, I use Promise3 med. Leeks, thinly sliced both white and light green parts2 C water3 lbs Yukon Gold potatoes, peeled and cubed28-32oz Low-sodium vegetable broth2 Thyme sprigs1 Tbsp minced garlic1 tsp Fresh ground black pepper1 Dried red chili pepper
Melt butter in large dutch oven; Add leeks and cook till tender, not browned (about 10min). Add water, potatoes, broth, and all remaining ingredients. Bring to a boil, then simmer for 40 min.
Remove thyme sprigs, then mash coarsely with a potato masher.
Recipe calls for cream, but to keep it vegan and/or low fat you won't miss it.
Serve with Parmesan-Cheddar toast , yum (nutritional content does not include).
