Jam-Filled Muffins

3 c biscuit/baking mix3 T sugar6 T cold butter (3/4 of a stick)1 c milkraspberry jam (recipe calls for 1/4 c, I just measure out 1 t per muffin and I use grape and have used strawberry, too)GLAZE:1/2 c powdered sugar2 t warm water1/4 t vanilla extract
In a bowl, combine biscuit mix and sugar. Cut in butter until the mixture resembles coarse crumbs. Stir in milk just until moistened (the batter will have a sticky consistency and be thick). Spoon about 1 T of batter into 12 paper-lined muffin cups. Top with 1 t jam. Spoon additional 1 T of batter over jam. Bake at 425 for 12-14 minutes. Meanwhile, in a small bowl, combine glaze ingredients until smooth. Remove muffins to a wire rack. Drizzle with glaze.
