Apple Fennel Slaw

Ingredients
2 tbsp cider vinegar1 tbsp olive oil1 1/2 tsp sugar1/4 tsp kosher salt1/4 tsp ground black pepper3 cups fennel bulb, thinly sliced (1 large bulb)4 small apples or 1 large apple, cored and thinly sliced1/4 cup flat leaf parsley, chopped1/4 cup red onion, thinly sliced
Directions
Combine vinegar, oil, sugar, salt and pepper. Whisk until sugar dissolves. Add in remaining ingredients and toss to coat.

Makes 4 1 cup servings.
