Carrot & Raisin Muffins

Ingredients
1 c. all-purpose flour1 c whole wheat flour1/4 tsp salt2 tsp baking powder1/4 tsp pumpkin pie spice1/3 c. raisins1 c. skim milk3/4 c. finely shredded carrots1 egg, beaten2 TBSP unsweetened apple sauce
Directions
1. Combine dry ingredients in large bowl.
2. Stir in shredded carrots and raisins. Make well in the center of mixture.
3. In separate bow combine egg, milk, applesauce, stir well.
4. Add to dry ingredients, stirring just until moistened.
5. Spoon into paper liners in muffin pan.
6. Bake at 425 degrees for 15 min or until lightly browned
